Lasagna Soup
One of my favorite things about cool fall weather and the transition from hot, dry days to blustery, crisp days is being able to make soup for dinner. I LOVE soups and stews and if I had it my way, I would eat soup three-four times a week. Dustin isn’t as big of a soup fanatic as I am, but is a good sport when I announce to him that I’m making soup AGAIN for dinner.
Anyway, I wanted to stray away from traditional chicken noodle soup and try something new. I found this recipe on pinterest and immediately knew I had to try it. First of all, I make a killer lasagna (not to toot my own horn, but it’s awesome). Second of all, I love my killer lasagna, but it can be time consuming to make so I loved that this would give us all of the same flavors but in a faster way!
So, with using the pinterest recipe as inspiration, I whipped up a big pot of Lasagna soup. Dustin even cleaned his whole bowl! I definitely recommend it to anyone who likes lasagna and soup. The recipe may look complex and lengthy, but it’s really just a bunch of different herbs and cheeses to add flavor!
